Lucy’s famous Sopa Tarasca Recipe
Roast 2 tomatoes, 1/3 of onion and 2 cloves of garlic.
In a blender put a large can of pinto beans and the roasted ingredients.
Add 1 Chile Pasilla, salt, pepper, 1 bay leaf and a cup of chicken broth.
(you can substitute with a cup of water and chicken bouillon).
Blend away!!
Heat up a pot with a little oil and transfer the mix. (I like to strain mine).
Leave it in low heat for 20 minutes.
Dress with tortilla strips, Queso Cotija and crema.
While buying the crema, make sure it has a white lid, not blue, green or red.
